Over the past few seasons, I’ve noticed a pattern in my brews: citrus, berries, and high-water fruits like watermelon always seem to ferment beautifully — light, bubbly, and refreshing. They give their magic so willingly.
But apples and pears? On their own, they never quite delivered that same effervescence. The texture would fall flat. The flavour felt shy.
Until now.

In one of my recent brews, I decided to blend apple and pear together. I didn’t expect much — just a gentle sip with autumn energy. But what I got was shockingly fizzy — no second ferment needed.
I suspect the combination of their sugars and natural pectin created the perfect storm for carbonation. The drink was slightly thicker, almost syrupy in texture — but bursting with sweetness, warmth, and sparkle. It tasted like cinnamon-spiced orchard air.
And it reminded me: Sometimes, it’s not about forcing results. It’s about pairing the right things together and letting nature do the rest.

The Recipe — Apple & Pear Ginger Bug Sparkle
Ingredients:
1 apple (organic preferred, skin on)
1 ripe pear (skin on)
2 tbsp raw cane sugar or coconut sugar
2 cups filtered water
2–3 tbsp active ginger bug (see how to make a ginger bug)
Optional: cinnamon stick or clove for depth
Directions:
Chop the apple and pear into small cubes — keep the skins for that wild yeast goodness.
Add the fruit, sugar, and water into a clean jar or swing-top bottle.
Stir until the sugar is mostly dissolved.
Add your ginger bug and give it a gentle mix.
Cover loosely with a cloth if using a jar, or seal your swing-top bottle.
Let it ferment at room temperature for 2–3 days.
