Tropical Pineapple Lemonade Ferment (With Blueberry Syrup)

The Ingredients
Pineapple skins + cores – rich in bromelain, a digestive enzyme that reduces inflammation and supports circulation
Lemon peel – gently detoxifying and alkalizing, helps the liver metabolize estrogen
Cinnamon + Clove – warm, grounding spices that balance blood sugar and enhance circulation
Blueberry syrup – loaded with polyphenols and antioxidants to nourish the skin, support cellular repair, and balance oxidative stress

The Instructions:
For the Ferment Base:
Skins and cores of 1 ripe pineapple
Peel of 1 lemon
1 cinnamon stick
3–5 whole cloves
2 tbsp raw honey (or to taste) – feeds the ferment
1–2 tbsp ginger bug
3–4 cups filtered, chlorine-free water
For the Blueberry Syrup:
1 cup fresh or frozen blueberries
2 tbsp maple syrup or raw honey
¼ cup water
Juice of ½ lemon (optional)
Instructions
1. Build Your Ferment:
In a clean glass jar (at least 1L), add the pineapple skins + cores, lemon peel, cinnamon, and cloves.
Pour in the raw honey, ginger bug, and filtered water, leaving 1–2 inches of headspace.
Stir well with a wooden spoon to mix and activate.
2. Fermentation Time:
Cover with a breathable cloth or fermentation lid.
Let sit at room temperature for 2–3 days, stirring once daily.
It’s ready when it’s slightly fizzy, tangy, and fragrant.
(If your space is warm, check after 48 hours. Cooler temps may need a full 3 days.)
3. Make the Blueberry Syrup:
In a saucepan, simmer blueberries, water, and maple syrup for 10–15 minutes.
Optional: Add lemon juice for extra brightness.
Mash lightly and strain through a sieve or cheesecloth. Let it cool. You can store this in the fridge for 1 week.
4. Strain
Strain your pineapple ferment
Pour into swing-top bottles for a second ferment (1 more day at room temp for fizz) or store in the fridge and enjoy as-is.
5. Combine
Serve your ferment chilled, over ice or with a sprig of mint.
Top with your blueberry syrup to your preferred sweetness and colour —Pour this after to get that gradient finish.
